This is a typical Swiss dish,
later become a part of
our kitchen. Small cuts
of meat are cooked directly
on the table into a pot called
caquelon filled with oil or,
for a more delicate taste,
warm white wine, over a
portable stove (the réchaud),
and served with various sauces
bringing out the taste of the
meat in a delicate and
balanced way.
